We are DealsPlus and not Panera but I can give you a couple of answers why that happens at any restaurant. Sometimes (think McDonalds McRib) a place will create a false urgency by only having something for a limited time. It makes you think twice about missing something because you don't know when you'll be able to get it again. Certain tastes are more "seasonal". In the summer, folks are less likely to want a hot soup. In the winter they are less likely to want a cold salad. Sometimes a food item just doesn't perform as well as a restaurant hopes. When this happens, there can be worry about the ingredients being as fresh as possible (customer experience) or ingredients going to waste (company bottom line). If all the ingredients in the Sierra Turkey are available because of other menu items that also use them, ask for a special sandwich to be made and tell them exactly what you want on it. And stay positive, lots of menu items come back from time to time.
