Christmas Eve dinner used to be just my wife and I. We would have lobster by candle light. Many years ago, we started including our parents. Now we have 2 kids as well. This year, we have invited my wife's brother, who is 31 and not in a relationship, rather that let him spend Christmas Eve alone. Steak is offered as an alternative to lobster. We'll have a champagne (and sparkling grape juice) toast. Being a beer geek, I will find a special Christmas beer to pair with dinner. This year's special dessert will be a homemade eggnog cheesecake (if I can find a recipe). Candles will still be lit.

Vegan lasagna with ricotta and cream cheese that we make from cashews, along with rice lasagna noodles, homemade tomato sauce, mushrooms, carrots, and spinach. It's then topped with a vegan cheese. It's so delicious!
