No-Bake Pumpkin Cheesecake

Fall is upon us! The leaves are starting to change color, the temperatures are getting cooler and the Halloween decorations are in full force! But nothing says fall more than pumpkin! It is around this time that you start seeing pumpkin recipes for everything! Pumpkin cookies, pumpkin pie, pumpkin pancakes and even pumpkin lattes! I love all of them! But today, I want to share with you one of my favorite pumpkin recipes. It is so delicious and also super easy to make. No-Bake Pumpkin Cheesecake! Enjoy!

Time: 10 minutes prep time + 4 hours (fridge time)
Yields: 8 servings

Ingredients:
8 oz. cream cheese (softened)
1/2 cup sugar
1 cup of pumpkin pie filling
3 cups of COOL WHIP
1 teaspoon of Pumpkin Pie Spice
1 Graham Cracker Pie Crust

Instructions:

  1. Mix the cream cheese and sugar together with a hand mixer until smooth. Make sure the cream cheese is already softened or it will be lumpy.
  2. Add the pumpkin pie filling and pumpkin pie spice and mix well for a minute or two.
  3. Carefully fold in the COOL WHIP until blended. (Do this with a spoon, do not use the mixer).
  4. Spoon the mixture into the pie crust. Let this sit in the fridge for about 4 hours before serving.
  5. Cut and serve. For garnish – add a dollop of COOL WHIP and sprinkle with a tiny bit of Pumpkin Pie Spice.
