I love a meal that comes together with only a few ingredients! This Pesto Lasagna Zucchini Boat recipe only calls for five ingredients. And, it’s a healthier alternative to traditional lasagna.

Pesto is a fantastic short cut ingredient for packing tons of Italian flavor into a dish with little effort. For this recipe, pesto and ricotta cheese are mixed together to make the flavorful filling in the zucchini boats.

There’s no pasta in this dish. Instead, the flavor of lasagna is stuffed inside hollowed out zucchini halves, making it a great option for low carb and gluten free dieters. Or, it can be a great option for anybody who’s trying to pack more veggies into their diet.

Serves: 4

Serving Size: 2 zucchini boats

Ingredients:

4 medium zucchini (about 1 1/2 pounds)

1/2 cup ricotta cheese

1/4 cup pesto

2/3 cup pasta sauce

1/2 cup shredded mozzarella cheese

Instructions:

  1. Preheat oven to 400 degrees F. Spray a 9x13 inch baking dish with cooking spray.
  2. Cut the ends off the zucchini and cut them in half, lengthwise. Use a spoon to scoop the center out of each zucchini half, leaving a 1/4 inch thick zucchini boat.
  3. In a medium-size bowl, add the ricotta and pesto. Mix until well combined. Spoon the pesto ricotta into the zucchini boats and spread the filling into an even layer.
  4. Place the stuffed zucchini boats in the baking dish. Top the zucchini boats with the pasta sauce. Spread the sauce evenly. Sprinkle the zucchini boats with shredded cheese.
  5. Cover the dish with aluminum foil. Bake for 35 minutes.
  6. Remove the foil. Let the zucchini boats rest for 5-10 minutes before serving.
