Quick and Easy Summer Grill Recipes

Nothing says Summer more than firing up the grill and cooking mouth-watering dishes for the whole neighborhood to enjoy. At The Plus Side, we enjoy sharing tasty recipes that you can make right at home without breaking the bank. Since there is a lot of time left to enjoy the sunshine and the company of friends and family, here are some simple and delicious Summer grill recipes that will keep everyone coming back for more!

If you’re tired of flipping burgers on the grill, try this easy recipe for fall-off-the-bone, Sweet Baby Back Ribs:

SWEET BABY BACK RIBS:

What you will need

-1 tablespoon paprika

-1 tablespoon dry mustard

-2 tablespoons sea salt

-1/2 teaspoon freshly ground pepper

-1/2 teaspoon cayenne pepper

-2 cups home-made or store bought BBQ sauce of your choice

-8 lbs baby back pork ribs

What to do next

1. Mix the first 5 ingredients in a small bowl to create the rub. Next, preheat oven to 360 degrees. Place each rack of ribs on a double layer of foil, then sprinkle the rub on each side of the ribs.

2. Bake ribs in oven for 2 hours, or until tender and juicy. Carefully unwrap ribs from foil with fork and let cool. Pour any extra juice from foil into a 4-cup measuring cup. Set aside.

3. Get the grill fired up. Start a medium-hot fire with a charcoal grill, or heat a gas grill to high. Add water to measuring cup of extra juice until it measures 1 to 1 ½ cups. Mix in BBQ sauce of your choice

4. Put ribs onto the grill once the grilling surface is ready. Counter the heat of the grill by brushing the BBQ sauce onto both sides of the ribs. Turn frequently until lightly charred and cooked all the way through for 7 to 10 minutes. Once cooked, transfer ribs to cutting board and cut them into individual pieces. Serve with a side of BBQ sauce. Yum!

Now that you have the meat portion of the BBQ ready to go, keep everyone (non-meat eaters) happy with this recipe for Mixed Veggie Kabobs:

MIXED VEGGIE KABOBS:

What you will need

-5 plum tomatoes. Cut in halves

-5 large portobello mushrooms. Cut stems and scoop out brown gills

-2 red onions. Slice ½ inch thick

-1 large red bell pepper

-1 large yellow bell pepper

-1 tablespoon thyme leaves

-1/2 cup extra-virgin olive oil

-Kosher salt and ground pepper

What to do next

1. Light a charcoal or gas grill and set to medium-high heat. Brush the portobello mushrooms, tomatoes, bell peppers and onion with the olive oil and season with salt and pepper. Sprinkle the thyme over the vegetables, turning occasionally for 7 minutes or until vegetables are lightly charred. Thread mushrooms and veggies onto skewers then place onto platter. Serve warm.

MEDITERRANEAN STYLE GRILLED POTATO SALAD:

What you will need

-6 Yukon Gold potatoes, cut in quarters

-2 tablespoons red wine vinegar

-2 tablespoons chopped oregano leaves

-1 ½ cups cherry tomatoes. Cut in halves

-1/4 cup extra virgin olive oil

-1 teaspoon dijon mustard

-1/2 teaspoon red chili flakes

-1/2 cup pitted black olives

-1/2 cup parsley leaves

What to do next

1. Heat up gas grill until it reaches medium heat between 350 to 550 degrees. Leave an area of the grill unheated for indirect heat. Toss Yukon potatoes in large bowl with 1 tablespoon extra virgin olive oil. Place potatoes on grill flat side down for 7 minutes. Move potatoes onto indirect heat area of the grill for 10 minutes or until tender. Let them cool then cut into desired chunk size.

2. Mix remaining extra virgin olive oil, red wine vinegar, chili flakes and oregano leaves into large bowl. Slowly mix in remaining ingredients until ready to serve.
