$7 Skillet Dinner for 4

Skillet meals are a great way to make dinner quickly and easily. I am all about skillet meals during the week - when you need yummy food but you really do not want to put in a ton of effort. The star of this dish is the homemade roasted tomato sauce. What I love so much about the sauce is it is BEYOND easy to make - all you have to do is put all the ingredients into a casserole dish (you do not even have to cut up the ingredients well which is ideal for the novice cook). Bake for about 30 minutes then place all the ingredients into a blender. Blend and you are done! If you have a mason jar handy you can store the sauce in the fridge for up to two weeks. 

Adding some protein (chicken) really takes this recipe to the next level. Everyone in my family loved the recipe and there were no leftovers. The best part of the recipe is the price - I actually broke down the complete cost of everything the final cost was $6.49 for the dish for 4 servings which equals only $1.62 per serving. The cost would go down if there was no chicken to a overall price of $4.49 for the dish or $1.12 per serving. 

Here is the breakdown:

Total cost: $6.49

Cost per serving (serves 4): $1.62 

Pasta - $.88 

Tomatoes (Canned) - $2.38

Chicken - $2.00

Carrot - $.08

Mozzarella Cheese - $.58

Garlic  -$.12

Salt and Pepper - $.10

Olive Oil - $.15

Optional - Onion - $.25

Ingredients 

  • 1 Pound of Penne Pasta
  • 1 Pound of Chicken 
  • 2 Cans of Tomatoes Whole 
  • 1 Carrot ( diced) 
  • 1/3 Cup of Mozzarella Cheese 
  • 2 Cloves of Garlic 
  • Salt and Pepper to Taste
  • 3 Tablespoons of Olive Oil 
  • 1/2 Onion ( not needed) 

Instructions

  1. Preheat oven to 425° F in a large casserole dish, then add tomatoes, carrots, garlic, onion (optional), 2 tablespoons of olive oil, salt and pepper.
  2. Bake uncovered for 20 minutes.
  3. While the sauce is baking, boil water and cook pasta and chicken. Simply cook the chicken in a skillet with salt and pepper and 1 tablespoon of oil.
  4. Blend the sauce's ingredients in a blender until smooth - takes under 1 minute.
  5. Mix the sauce and 1 pound of cooked pasta.
  6. Place sauced pasta in a skillet dish and sprinkle with cheese and chicken.
  7. Place skillet in the oven at 425° F for 5 minutes.
